阿魏酸是广泛存在于自然界的植物之中,其化学名称为4-羟基-甲氧基肉桂酸,是植物中普遍存在的一种酚酸。 阿魏酸有顺式、反式两种,顺式为黄色油状物,反式为正方菱形结晶或纤维结晶,能溶于热水、乙醇和乙酸乙酯,稍溶于 ,难溶于苯和石油醚。
阿魏酸是植物界普遍存在的一种芳香酸,是木栓质的组分,在植物体内很少以游离态存在,主要与低聚糖、多胺、脂类和多糖形成结合态。天然阿魏酸主要来源于米糠提取物,同时,可以通过合成的技术手段得到阿魏酸。天然阿魏酸和合成阿魏酸可以通过技术手段区分。
阿魏酸具有许多保健功能,如清除自由基、抗血栓、抗菌消炎、抑制肿瘤、防治高血压、心脏病、增强 精子活力等。天然阿魏酸毒性低,易于为人体代谢,可用做食物防腐剂,在食品、医药等方面有着广泛用途。
阿魏酸除在医药是广泛应用外,一些国家已批准将之作为食品添加剂。日本已允许用于食品抗氧化剂,美国和一些欧洲国家则允许采用一些含阿魏酸量较高的草药、咖啡、香兰豆等作为抗氧化剂。阿魏酸在食品工业中主要用于制备天然香兰素、抗氧化剂、防腐剂、交联剂和机能促进剂等。
